There is a new upcoming kit from Tamiya at 1/48, the German heavy tractor SS-100.
Extensively used to tow guns, aircraft and even the V-2 rockets, it is going to be available also at 1/48 scale from Tamiya.

The kit includes the driver figure, and a tow bar in case you want to add an aircraft behind -as shown on the cover.

Takom is nowhere near the fidelity of a Tamiya kit. Nevertheless they are fine in their own right and we already have a 1/35 release by them. This is still a bit of a shocker to me, a SS100 by Tamiya. It does have multiple appeal (aircraft tow, used in the field, with Vergeltungs waffe etc.)

Hi. Custom Scale dissapointed me with their bad castings in resin so far. Ordered 2 kits, tears come to your eyes unpacking the very nice boxing. For the SS100 Panzerart makes some resin wheels too. Good resin! The Russian I don't know, from sites it looks good, but... Combination with Einheitsdiesel engine gives opportunities for further details. Rest will be research and some scratch building. I speak for 1/35 scale now, according to the SS100 Hanomag Kind regards, Robert Jan

I really like the potentials in this kit in 1/48 as I finally have something besides a kettenkrad to tow my JU-88 dio. Kudos Tamiya, now offer a conversion set for the 1/35th FAMO!

Pegasus makes a styrene V2 in 1/48, if it can still be found. Plastic is kind of thick, and decals (actually stickers, I think) are silly, but the model is accurate and surface detail is well done. LINK

And then there's the dated but still available Revell Meillerwagen and V2 kit in 1/54 scale, which when built looks pretty close to 1/48, even if the kit is not totally accurate and covered with pesky rivets. But if you wait long enough, I'll bet somebody will come out with a 1/48 version. I scratchbuilt a Vidalwagen for my Dragon 1/35 V2 a couple of years ago-- and now Takom is releasing a 1/35 Vidalwagen kit-- which I never thought would happen, so this might be the beginning of a "renaissance" for the V2, who knows?!! Will this have the correct tires, or did they use the same example vehicle Takom did with the post-war set.
